Sabal yapa?

My wife and I, for our 10 year anniversary, took our first ever cruise, to Cozumel.  Our time here is short but we got to do a short bit of sight seeing. 

I am not familiar with any of the less hardy palms.  Are these perhaps Sabal yapa?

Yes, it is the only Sabal that grows naturally in the island. If you get to collect some seed, they germinate easily.  My seeds brought from Quintana Roo germinated in 2 weeks.

Very likely they are. I took a jungle walk on Cozumel about 10 years ago and Sabal yapa (our guide told us) were everywhere. They were not seeding but I tried to dig up a few strap leaf seedlings to take back to our ship. None of them survived the trauma.

Yes and yes I believe. I definitely saw Cham seifrizii on Cozumel and Thrinax radiata grew alongside a beach road our tour bus passed.
