Murraya paniculata is a very over-used hedging plant here, but it may be different in your area. Pretty drought tolerant, nice leaf texture and great fragrance. It is only over used because it is so good at being a hedge.

Another good hedge plant here is Duranta repens 'Sheena's Gold' which is a nice yellow colour for something different.

Silver Sage (Artemesia) for the silver foliage and purple bloom. Variegated Chinese Privet (Ligustrum) for the lime green foliage.  Or there are literally hundreds of pretty well-behaved, drought resistant ornamental grasses out there.  If you pick the right grass, it'll grow to its maximum height and stop - no pruning!  Just whack it off at the ground when you get tired of looking at it.  All colors too from purple to brown to green.
