If I cut of the trunks I don’t want flush with the ground could that cause rot and death to the main trunk?

If so I assume it’s best to dig them out using a sharp shovel.

Do the ones I remove that way have any chance of survival and is it likely the trunk I want the stand dies due to rot disturbance?

I cut the suckers off mine to keep a solitary look.  Much easier to do as they appear and still small.  Sounds like yours might already have several suckers (photos are always helpful).  It's possible for suckers to survive as new plants but from what I understand the sucker needs to be the width of a 1-liter bottle or larger and already have roots attached to have success.  I've tried a couple times unsuccessfully with smaller suckers.  If your suckers are somewhat large I would recommend dusting the wounds with powdered sulfur after removing the suckers to prevent any damage to the main trunk.

I have a large one that never formed suckers at all. I bought it as a tiny seedling in a band for $3 hoping it would form a nice , short clump. It instead grew straight up . I would check constantly when it was young , never happened. I would think that you could cut the suckers off without much harm . Harry

Well, first I will say that these suckers won't crawl along the ground. They're going to grow upward. Second, as a single-trunk, they look very similar to Trachycarpus. Yes, the crown is a bit different, but I prefer a multi-trunk Chamaerhops.

Yes, you can cut any you do not want to keep. Be sure to keep it dry. Cut as low as you can get to, without cutting into the main trunk.

Conversely, I grew one that all it wanted to do was send out offsets. I recall cutting some but they always grew back.
