Boy, oh boy, you're gonna think I've been into the datura seed on this one.

The Wall Street Journal today had an article about white truffles in Italy and a market for them, yadda yadda yadda.

So, has anyone here tasted them?

White truffs?

Or Black?

What's the difference.

Hi Dave,

These are umm things in any form that they come.

We indulged in these many times in Italy as the cost there is reasonable in comparison to other places.

From what I understand, Truffles are a tuber that grow on the roots of Oak trees and dogs are used to sniff out their location for the collectors. Also wild pigs love them.

Here is a pic of one that we had with fresh homemade pasta on Marijani's birthday at a farm stay place in Umbria. Too good.

Italians really have the art of eating down.

From what I remember the black truffles were more expensive and considered stronger. There seems to be a few different types of each.

We brought home 3 types of truffle products in pic here.

The tall jar is white truffle in olive oil. Just a few drops in the cooked pasta sends it to another level of taste sensation. Quite addictive. Now it is hard to have pasta without it.

The tube is a summer truffle puree.

The small jar is some in honey. We are saving that for a special moment on our anniversary. Will be sweet I say.

The whole truffle sensation is a little reminiscent of good mushrooms but still something all apart from other tastes.

Get into it.

I don't know why I'm responding to this thread, since I don't think I've ever tasted a truffle. There was an acticle in the newspaper a few years back about only one restaurant in Oakland that features truffles shaved into thin slices on top of a sauce. They had a picture of a large truffle and said it was valued at several thousand dollars. I'd call that a very expensive sauce.

The only thing I know about truffles is that the black ones are primarily from white oak forests in southwestern France.  I didn't know it until I was buying white oaks for my front yard that apparently, you can buy a white oak sapling already "infected" with the fungus that produces the truffle fruiting bodies on the roots.  I think many other factors, like pH, moisture, and soil conditions determine whether you'll actually get truffles or not.

Can someone give me an image of the taste, to someone who still wears Chuck Taylors for good (or bad) shoes, i.e., sweet, musky, hot, etc. etc.

They taste like truffles. :D

Buy some and find out.

Most of these really expensive products are a taste sensation all of their own like saffron and vanilla.

You just have to try them and then also understand how labor intensive is the work of acquiring and processing them.

Gonzer is correct.

Truffles add a special aspect to whatever they areadded to that is unique and quite memorable.

Dean and DeLuca (a small deli chain in this area) carry a cheese that id infused with truffles.....lasts a very short time in my household. Like feeding time at the pig farm....fabulous

Tycoons to bid for giant fungus in Macau

Hong Kong and Macau's richest tycoons are expected to gather at an exclusive auction this Saturday for a chance to snaffle one of the largest truffles ever discovered, organisers said today.

The giant white truffle, which weighs in at 1.5 kilogrammes, will be sold via videolink to diners at billionaire Stanley Ho's Grand Lisboa casino, in Macau, a spokeswoman for the casino said today.

The fungus, which was found in a wood near Pisa, in Italy's Tuscany region on Friday, is expected to fetch more than 206,000 US dollars, according to auction organiser Giselle Oberti.

"We hope to get the truffle blessed by the Pope before it flies out, but things need to move fast as white truffles should be eaten within 20 days," said Oberti, according to Britain's Guardian newspaper.

The truffle, which is one of five earmarked for China to be sold at the charity auction, is the latest sign of how the fungus fascinates the richest in China.

Earlier this month the most expensive white truffle per ounce ever bought — which cost $234,000 — was served up at a banquet in Hong Kong for the three mainland property developers who had paid for it.

Last year, Hong Kong billionaire Sir Gordon Wu paid $209,000 for a 1.5 kilogramme white truffle, in the annual Worldwide Alba Truffle Auction, thought to be the second biggest ever found.

The largest truffle ever found was a 2.5 kilogramme truffle found in 1954 and presented to then-US President Dwight Eisenhower, according to the Guardian report.
