Let the Coconut live!    Rickybobby you are a Coconut Cowboy for sure!   You have one tuff coconut there!  I almost lost mine that was outside in a pot when the late October temp suddenly dropped to 26 F(-3.3 C).  Killed the leaves and branches back to the mainstem and crown....   Like yours it lives and is recovering in the.greenhouse.

Lol. My garage is so cold and it didn’t die. I thought around zero would kill it. Not happening so it got a new pot and water. First time since September lol
