Pacaya for Dinner ?( Chamaedorea tepejilote)

Chamaedorea tepejilote, locally known as Pacaya is found all over Guatemala .The male inflorescence is a very popular food item. The varieties from Coban are the best. I like them cooked with onion and egg for breakfast.

I went to the main market in Guatemala City today and encountered these fine examples . These Pacayas were about two feet long and had to come from some massive Chamaedorea tepejilote.

There were about 60 per bundle and cost $25.00. These four set aside in the photo had been sold.

I think that it is important for everyone to see that palms are more than just landscape specimens. Many species are very important in their native environments.

Dave this is a video in spanish ,but is easy to understand. They use Goya brand Pacayas that can be easily found in Latino markets in the US

Dave, if you do get a chance to harvest your pacayas the inflorescence must be absolutely white, no hint of green or it will taste extremely bitter.
