I've just planted a store bought coconut but from what I've read it could take most of the spring and summer for it to sprout so I'm looking to buy a young coconut that has already sprouted.

 

I would hit up Ebay.  Numerous sellers of these.

I can get you some of these when I get back to Florida. Will be back in May.

Awesome, I'm thinking about giving a coconut palm a try in the ground here. Hopefully it'll work for at least a few years with winter protection.

I'd keep it in a pot, honestly - I don't think you will get it through even one winter.  Your winter average temps are below here, and I have zero chance.

I was thinking about putting a greenhouse over it for one winter like I do with my Phoenix Roebelinii but I don't know if that helps with the soil temps.

Do you know how long they can stay in pots before having to be planted?

Nah - you'll get better advice from others.  So many palms I CAN grow here - I focus on those!  You need to get into the cocoid hybrids man.
