I have 100s of 2 leaf seedlings that are growing under my saribus. I want to pot up a few to give them a chance. How will they do planting 3 or more in a pot, or am I asking for trouble when they grow larger ? I have seen Livistona chinensis grown in this fashion many times.

I say go for it! If it fails, you still have 100s of volunteers to experiment with :D .

sarabus have a heavy root ball from the 10-16' trees I've moved. I've planted singles and doubles but never triples. The doubles are massive. Triples would take a lot of space eventually.

Let me know how the volunteer seedlings transplant.
