I have had a big royal palm for years that had a bad spot in the trunk. I pulled it out today and harvested the heart and made a salad. I will post some pix here so Y'all can see what it looks like inside the crown of a royal.

The first pic represents about half of the edible potion.

Here is a shot of the cross section. The yellow spots are where bloom spikes are forming. They taste good too!

This shot is the chopped heart. I used the end closest to the meristem as it is the most tender. I saved half for a friend.

There is alot of food in one heart. You could make enough salad for 15 people easily!

I love avocado. During the season it goes in all my salads! And on Pizza! Even good on fish tacos Tad and Dave!

Oh, that looks delicious. I just bought some hearts of palm at Costco -- certified farmed palms -- but canned, not fresh.

When I went to Madagascar in March, a cyclone had just blown through. At dinner, Bruno served a heart of palm salad -- absolutely delicious! Unfortunately, the palm hearts came from coconut palms blown down on his property, so it was bittersweet. :(

I hear you Kim! I know the feeling! I grew up on a 22,000 acre ranch and my stepfather had us harvest the hearts of Sabals, we here in Florida call it "Swamp Cabbage". Even as a child i loved palms and i did'nt like cutting them down, but i had to. We would shoot a wild turkey every year for thanksgiving and have a huge feast! I will agree w/ everybody that is very tasty!!

Looks delish, Ken!

Zone 10a at best after 2007 AND 2013, on SW facing hill, 1 1/2 miles from coast in Oceanside, CA. 30-98 degrees, and 45-80deg. about 95% of the time.

Yes, the tissue oxidizes quickly so it is best when used immediately as I did in the salad. If you want to keep some for a while leave on older leaf sheath on the outside and wrap it in plastic wrap and refrigerate. When ready to use remove the outer sheath and the inside will be whiter.

BTW the slightly brown color does not affect the taste. Also lime juice in your salad will help keep it white for days, as will vinegar.

It's hard to describe,,, kinda like raw califlower and cooked cabbage. But has alot more flavor than raw califlower.

Maybe Ken can describe it better!

Mark I think you described it well. All palms have a slightly different taste, Royals are sweeter than some others. Cocconut is by far my favorite as it has the unmistakable flavor of coconut oil. BTW the bloom spikes are full of flavor. If you pick them out they make a great garnish.

Hummmmmm Ken....it looks delicious, with balsamic vinegar please...

We've just tried a coconut palm heart for the first time here. I'll post a picture soon.

I had to sacrifice 3 adult Cocos in order to make room for the newly built 3rd shadehouse...In my opinion Euterpe oleracea makes the most delicious palmito though...not so fibrous as the coconut's...
