Wanting to fill in some shade spots in winter to perk things up.  50% of winters stay 8A or above.  I Expect dieback to ground when 7A winters show up.  What can I expect and what is best place to purchase a couple?  I don't think I want the spiderweb version.

I had always read they were very cold hardy - down to 15F or so.  Found out this winter that is not true at all. 
My area dropped down to near 20F this Christmas freeze one night. All the ones around town, including mine, defoliated with many branches even freezing down to the ground. 
None are dead, of course, and will quickly grow back, but still, not that cold hardy.

I grew multiple regular Fatsia japonica for a few years, but didn’t lose them to cold. Something actually ate the roots. I didn’t realize what had happened until I pulled on them and they easily popped out of the ground (after noticing they were wilting). They were about 3 feet tall. I purchased them from one of the big box stores when they were about 6 in - 1 ft tall. I have fatshedera as well, and so far nothing has tried to eat them (yet). I planted the spider web version (ordered online) in a different location last summer and it looks fine after the Arctic blast in December. Closest temperature sensor read 10.4°F.

My Zone is 7A and I have two that have flourished and two more younger ones that have done just fine. They get beaten up a bit during the winter, but no more than many other shrubs.

In brief-- go for it.

I’m not sure. My spider web one is only a few inches tall with barely any variegation yet. From photos I’ve seen, I think it looks interesting. Overall, comparing photos of that vs the regular I’ve grown, the regular looks more tropical in my opinion. Here’s a photo of some I saw in Norfolk that I thought looked nice grouped with Sabal minor. They were growing under the canopy of a live oak.

Surprisingly I'm finding a variegated version but no regular version.

I grabbed all four of mine while vacationing on the Outer Banks. You could do a beach trip to the Carolinas or Virginia Beach and load up at the nurseries.  Pick up some other goodies while you are there.

Longer ride for you than me, but it's not just for plants. 😎

Cool. I forgot to mention that I tried a variegated and it is the one casualty of all my Fatsias. But that could have been lots of things, including my own incompetence.

Keep us posted. They are the coolest looking plants. Even if I lived in Hawaii, I would grow a few.
