Just have a few questions.

So my seedling has been doing much better. I just wanted to know two things.

1) Do I need to trim off the dead leaves? If I do, can I grind them up and add them to the soil for the plant?

2) Are these weeds or are they small plants that are helpful for the seedling?

I think the weeds are not really beneficial and might compete for nutrients with your palm. Probably not a big deal but I'd remove them.

I think cutting of the dead parts is just for looks.

I'm not an expert. 

 

But since the leaves are totally brown I don't think there's any harm in removing them. Also not an expert but I don't see any problems with grinding them up and using them as mulch. 

 

The other plants are weeds and they'll steal nutrients from your soil. When I get stuff like this in my potted palms I just yank them out and toss them.

If they are brown cut around the base leaving the old leaf base in tact don't take those off they will come off when they are ready but do cut the leaf off I wouldn't add it to the soil it won't do anything. As for weeds pull them out as you see them pop up

just from observation but your coconut leaves have died off much sooner than they should have, usally those first leaves die off after the 6th petiole, I would suggest repotting so it can hold more leaves.

I don't think it is the pot size. My small Cocos is taller/older than OP's and is in a smaller pot without suffering from premature frond browning.

Actually I think it could be from root rot from overwatering and soil that is too rich (not enough drainage material like perlite, sand etc).
