Hey eveyrone.. NW Piedmont NC here with a yard full of yet to be identified Sabals that have been growing on their own.. with no assistance whatsoever and have 'naturalized' or that is the term the Ag 
Agency uses.. anyway... I am thinking about selling some seeds online this year since they come up everyewhere cracks in sidewalks, downspouts.. all over the lawn.. along the creek,, point is they are super hardy thing is i do not know when or how to start collecting some of them. thanks

Based on your location I'm betting on Sabal minor if small or Sabal palmetto if it's a trunking palm.  Fruits turn from green to a purplish black color when ripe.  Best time to collect is when fruits start dropping but you can collect them once the fruits turn purple/black.

I have discovered that they continue to ripen longer if stored in fruits BUT if you have weevils you have to keep watching them and remove the weevils or they can eat into even a hard seed and make another... they will grow if picked after the seed turns black and especially after they drop but my seeds actually grew larger than the first batch in pulled out... it may affect germ rate. Not 100% sure though my smaller seeds I pulled out before storing are doing well from a palmetto

I think it's best to store a while to make sure you are not passing on weevils and shake them every week in small containers to get the bugs moving and remove
