Metalfan, Scrapple is a mushy concoction of pork scraps and other trimmings left over from the pig. They mix it with cornmeal or flour and other seasonings and form it into a loaf. Then you slice it and fry it before serving. I watched people eat scrapple my whole life and never could understand why anyone would possibly want to eat that stuff. It's actually grey in color, but then it turns golden brown when you fry it. Most people I know eat it with ketchup on top. It's a breakfast substitute for bacon or sausage.

My grandparents who were from Central Pennsylvania used to eat something called Souse. That stuff was even worse. They cooked the head of a pig and mixed the meat with gelatin and formed it into a loaf. Souse wasn't fried at least, but it was one of the nastiest looking foods I have ever seen.
