Is it at least possible for you to protect it with a small greenhouse-like structure or something?

Back when I lived in Michigan (USDA zone 5b/5a with 6a temperatures some winters [I lived there a while ago, so yeah]), the inside of my apartment (so it was receiving heat from other apartments) would at least go into the 40s, even with my warm body in the home when the heat wasn't on for about a week, so your home, not receiving much, if any warmth from other homes will likely be whatever temperature it is outside by the time you get back (assuming you will be gone for a week or longer).

Power will be on tonight. I just wonder if the seedling can handle 60s

The fronds should be alright.  68F steady for a solid week will probably be OK, but they do like warm soil temperatures better.  Cool soil temperatures are often their undoing in mediterranean climates.

I’m pretty upset the ice storm screwed me. We have to leave our house and head for an airport hotel cause of the weather and lack of power and now a day later no power still all my palm seedlings and all my hard work and money at risk.

I don't know if you have access to lawn clippings but if you pile them up around the base of the plant they should keep it very warm for a week while you're away and you won't have to worry about power.

My coconut is just a sprout in a pot and it’s indoors. From what my in laws said. The house was about 16c upstairs so probably 13c down stairs but got there slowly over a day then the heat came roaring back on
