Pickled Purslane
As promised, here's the edible weed I mentioned earlier. Purslane leaves contain more omega-3 fatty acids than some fish oils and are rich in vitamin A, vitamin C, and a number of other antioxidants. The fleshy leaves and stems have a salty, lemony flavor, and pickles made from the weed are perfect on sandwiches.

Ingredients:
1 pound purslane
1/2 cup vinegar
1/4 cup water
1 teaspoon sea salt
2 Tablespoons spices of your choice*
1 clove of garlic

*Try one or a combination of the following: dill seed, coriander seed, peppercorns, crushed red pepper, mustard seed, or allspice.

Directions:
1. Fill a jar with your purslane.

2. Mix the seasonings with the vinegar and pour that over the purslane, adding water if needed to cover all your green weeds.

3. Cover the jar and store in the fridge for at least a week, chilling fat stems for at least a couple of weeks, to develop flavor. As long as the purslane is completely covered with vinegar, it will keep for at least a year.

Try it fresh in a salad with olive oil and lemon or vinegar.

Tastes great.

Feed it to your pets also (birds, rabbits etc).

Very healthy.

Last night I stuffed a 1/2 gallon bell jar full of sliced rounds of turnip, daikon radish and giant red mustard leaf. Threw in a few thin slices of ginger, some herbs and a sweet rice vinegar slurry. Hope to have a nice Asian fridge pickle in a few days. Last time the radish leaf bled out some color and turned everything pink!

Anyone have personal experience with this? Photos? Sounds interesting, purslane has always been a nasty enemy, now perhaps turned food source!

You can do a lot more than pickle it.

I get a lot, and, in season, I eat a lot. It has a tangy taste. You can put it in soups to cook, or even raw in salads.

I sometimes make a soup with water, purslane, fish like swai or halibut or snapper, a bit of tomato, garlic, onions/shallots, wiht Viet fish sauce. Good on a hot day! With a cold beer . . .

I've sprayed so much purslane with herbicide in my life that it's hard to imagine there's any left, of course it's always been a losing battle anyway.
