Story goes like this, I recived a duck as a gift some time ago and I would like to cook something special for familly Easter lunch but ducks are not common meal here and I dont have any idea what to do with it. :blush:

Duck is a lot oilier than other fowl.

It can be roasted, smoked or cooked l'orange . . .

Donald with an orange sauce - nothing better. Duch is all dark meat. Oily so they can float and keep therir feathers water repellant. Pierce the skin alot to release the fats when cooking. Roast until real crispy. I like to stuff duck with wild rice and mushrooms! :drool:
